This guide contains a link to a Elden Ring Boss Checklist Google Spreadsheet. I had yet to find a well put together, accurate boss checklist for Elden Ring, so I created one myself.

The link above will take you to the spreadsheet. From there, you can only view and comment on it. To make a copy of your own to use, select "File" in the top left corner. Then from there, select "Make a copy". From there you can rename your copied document. Then select "Ok". Now you can check off the bosses you have defeated. Or you can edit the spreadsheet all you like. You can create multiple copies for all of your different characters. This can help you to track down the bosses you are missing. Also to remember which ones you have done. After about 100 bossfights, you start to forget some of them...
I based the Boss List from my personal gameplay experience, with confirmation from the Elden Ring eldenring.wiki.fextralife.com, and the Elden Ring Interactive Map. But the wiki and map are still somewhat inaccurate in some areas, and aren't fully reliable at the moment. But this checklist will be one of the most accurate boss lists you will find. If you notice something with the checklist that is missing or incorrect, please comment on the version of the list owned by me, and comment on this guide. I will try to update and fix any mistakes I encounter. Also feel free to ask any question or needed clarification when it comes to my checklist or the game itself.
The checklist contains all the bosses, split up between all the main areas of the world. There is a notes section with a key identifying the icons next to the boss names, along with other side note statements. I have assigned icons to each boss based on what type of boss they are. There is also a general location in parenthesis next to the bosses name of where the boss is. There is an attempts number input box next to each boss for you to fill in if you would like.
This spreadsheet contains two additional sheets which you can select at the bottom of the screen. One is the Invader Checklist, showing all the invaders. Another is a checklist about Remembrances and Mausoleums if you care to use that.
The checklist contains spoilers in the context of boss names further on in the game. Really only spoils it if you are familiar with the lore.

Altus Plateau Option 1: Find both Medallion pieces to activate the Grand Lift of Dectus. Dectus Medallion (Left): Take the ladder inside the tower of Forth Haight and open the chest at the top. Dectus Medallion (Right): Take the ladder inside Forth Faroth and open the chest at the top. Option 2: Slay Magma Wyrm Makar past the Ruin-Strewn Precipice Overlook Site of Grace and take the lift behind it. Haligtree Haligtree Secret Medallion (Left): Take the elevator past General Niall in Castle Sol. Haligtree Secret Medallion (Right): From the Village of the Albinaurics site of grace go East past the enemy that likes to try and burn you, attack the jar and interact with the NPC. Note: Use your imagination for the screenshot of the Jar. Smithing Stone Personally I do not consider these to be worth going around getting since you need 12 of each, I just stick to a weapon I can upgrade with Somber Smithing Stones until I can get the Smithing-Stone Bearings. I may add some easy to find Smithing Stones to this guide later on if I figure an optimal path to get them that doesn't require a minimum of 96 screenshots. Somber Smithing Stone The purpose of this section is to allow you to have your main weapon reach the maximum upgrade without fighting any bosses. Should you want to upgrade another weapon I would recommend to advance the story and collect the Somber-Stone Bearing items instead to be able to buy the materials from a merchant. Somber Smithing Stone +1 to +4 Purchase from War Counselor Iji for a total of 15,000 Runes. Somber Smithing Stone +5 In the Volcano Manor right before Godskin Noble boss fight. Somber Smithing Stone +6 From Bridge of Iniquity hug the left wall and continue West until you see a ladder, you will reach the First Mt. Gelmir Campsite Site of Grace and see it on a chair facing the cliff towards the Site of Grace where we started. Somber Smithing Stone +7 In the Volcano Manor after you extend the bridge, you will need to make a jump for it. Somber Smithing Stone +8 From the Dragonbarrow West Site of Grace head towards the Divine Tower of Caelid, you will find a Scarab past the halfway point that will drop it on death. Somber Smithing Stone +9 Loot the corpse inside the circle of chairs that is right outside the Divine Tower of Caelid. Somber Ancient Dragon Smithing Stone Inside the chest below the giant statue you can see right next to the Dynasty Mausoleum Midpoint Warning: Unlike the previous stones these ones are limited, only use it if you are willing to commit to your weapon. Rune Grinding Farum Greatbridge Location: To reach this farm you have two options: Reach this location on foot. Use the teleporter on the "lake" slightly Northeast of the Third Church of Marika Site of Grace, then make your way to the Site of Grace. Note: After you teleport you can open the door on your back for a quick Site of Grace. Method: Kill Vulgar Militiamen (Tiny soldier dudes). Lenne's Rise Location: Refer to the options above for "Farum Greatbridge". Method: Go downhill while riding Torrent, eventually a boulder will spawn behind you. Make it fall to its death and position your camera to witness the death. Palace Approach Ledge-Road Location: To reach this farm you have two options: Advance White-Faced Varre's questline until you get the Pureblood Knight's Medal, which requires for you to slay 2 bosses. After you teleport using this item, grab the map in front of you and there will be a Site of Grace upstairs to the left. Now get out of there and ride Torrent to reach the Palace Approach Ledge-Road Site of Grace. Use the teleporter located in Consecrated Snowfield to the Southwest of the Ordina, Liturgical Town Site of Grace, which requires you to be far into the story having defeated around 7 bosses. Method 1: Kill Albinauric (Ugly alien-looking dudes).
